The country's largest food mall, Vokzal 1853, has opened a space dedicated to Russian cuisine, as well as the cuisines of Russia's peoples—"The Gastronomic Map of Russia."
This is a continuation of Ekaterina Shapovalova's federal project, which brings together restaurateurs, chefs, and producers from across the country. "The Gastronomic Map of Russia" is "a place where the journey begins not with the ticket, but with the first bite." From Russian lofty with Taimyr venison and Murmansk salmon to Don kurniks and Buryat buuzas—it will bring together pioneers of Russian regional cuisine, their families, and teams of chefs from the Far East to the Arctic.
Corners representing the cuisines of Russia's peoples will be located on the second floor of the food mall. The first residents of the project. "Buuzy," Republic of Buryatia. Inna and Damdin Dashiev's project is one of the first participants in the "Gastronomic Map of Russia" mobile festivals, which launched during the 2018 FIFA World Cup.
Over 30 festivals from Vladivostok to Kaliningrad have made buuzy famous throughout the country. Buryat cuisine dishes such as buuzy, khushuur, the Buryat bird cherry dessert kholiso, and Buryat tea can now be enjoyed in St. Petersburg. "Tsar Kurnik," Rostov Oblast Project creator Oleg Kuchkov has transformed the traditional kurnik—one of the oldest Russian holiday dishes—into a street food format. These hand-sized kurniks, with a variety of fillings, have become a gastronomic symbol of southern Russia and one of the most popular dishes at all Gastrokarta festivals. "Russkiy Lomot," Murmansk Oblast Gastrokarta stars Ekaterina and Georgy Mun from the Murmansk Oblast are the founders of the first Arctic cuisine café in Russia. They will represent not only their native Russian North but also the diverse flavors of our country. A slice of potato bread with the flavors of Russia's regions: Taimyr venison with lingonberries, Kuban brisket, Volga pike perch, Murmansk salmon, boiled Voronezh beef, and Crimean onions.
"Now you can begin your journey across Russia right at the Vokzal. Entrepreneurs who focus on Russian cuisine—Russian, regional, and national—will gather here. This isn't just food or a 'gastronomic experience,' it's an introduction to the history and culture of our multinational country through the culinary traditions of our heroes' families," notes project curator Ekaterina Shapovalova. Vokzal 1853 will be the first commercial food mall in Russia to invest in the development of Russian cuisine. The "Gastronomic Map of Russia" projects are currently running in Moscow, at the House of Russian Cuisine at VDNKh.
